Dried slowly on the slopes of the Valli di Lanzo near Torino, the flavour of these tomatoes becomes more intense with each passing sun-drenched day. In fact they are only permitted to cease their sunbathing when they simply can’t get any tomatoier. And yes that is a word.

Great as an anitpasto, with mozzeralla and in pasta sauces.
